The cost of one of the most expensive spices in the world, saffron, has reached a historical high. In Iran, it is sold for $1,400 per kilogram, while in other countries the price reaches $1,800. The increase in saffron prices is a result of a decrease in harvest in Iran due to changing weather conditions and water shortages. The overall production will decrease from nearly 400 tons to 170 tons. The high cost of saffron is explained by the labor-intensive production: one flower produces only three stigmas, resulting in the need for 200 thousand flowers to obtain one kilogram of the spice.
