When the Manuka shrub blooms, the plant produces an antibacterial substance called methylglyoxal, which is collected along with bees' nectar during flower pollination. Thanks to this substance, the healing properties of manuka are preserved even when exposed to light, heat and sterilization. Manuka has its own system for measuring effectiveness, which is calculated based on the rate of death of bacteria and viruses. This is the "Unique Manuka Factor" (UFM), or "Indicative of Dietary Methylglyoxal Level" (MGO).
